Ingredients

  • 1/2 cup butter softened
  • 6 tbsp Garden of Life RAW Extra Virgin Coconut Oil
  • 4 eggs
  • 1 tsp vanilla extract
  • 4 tbsp keto-friendly sweetenner
  • 6 tbsp coconut flour
  • 2 cup sugar-free chocolate chips
  • 2 cup unsweetened shredded coconut
  • 3/4 cup chopped walnuts

Method

  1. Preheat the oven to 350 degrees and line a baking sheet with parchment. Set it aside.

  2. Add butter, coconut oil, eggs, vanilla extract, and keto-friendly sweetener in a large mixing bowl, stir until the sweetener is dissolved

  3. Add chocolate chips, coconut flour, shredded coconut, and walnuts to the bowl and mix until combined.

  4. Use a cookie scoop and drop rounded tablespoons about two inches apart onto the parchment-lined pan.

  5. Bake for about 12-15 minutes per batch, or until the exterior is golden brown.

  6. Store these in an airtight container for up to 2 days. Put them into the fridge if you’d like to keep any longer than that.
